Barricato al Pepe
Barricato al Pepe is a beautiful semi-hard cow's milk cheese from Veneto, Italy. "Barricato" refers to the process of aging the cheese in wine barrels. After an initial 90 days, the wheel is removed and then buried in black peppercorn and returned to the barrel to continue to mature. The firm interior paste of this cheese is dotted with black peppercorns, which adds to the buttery flavor without overwhelming. During aging, wine residue in the barrels seeps into the cheese, adding a slight fruitiness. The resulting flavor is a delicious, well-balanced blend.
